Ecosse - La Gigue (Meat Extract)

"Peptone de la Viande de la Compagnie Liebig - Ecosse. La Gigue.", from the c. 1900 French edition of Liebig's Trading Cards, advertising their famous meat extract! Recipe on the back of this card for Pigeons a la bourgeoise (which apparently, is Pigeons with mushrooms, herbs, artichokes, seasoning and meat extract). There's nothing like meat extract for giving one enough energy for highland dancing to "La Gigue" - the jig. This time the bagpipe player is making do without a chanter. What are they serving at that refreshment table? More whisky!!! More meat extract!!
